The Wellness Tribe’s SeneGambian Jollof Rice

FareShare North East provides weekly deliveries to The Wellness Tribe, a BAME-led organisation led by Maria and Gibril. The Wellness Tribe provides a first point of contact for families and individuals at high risk, and those experiencing mental health issues, food provision during Covid-19 became vital for many people they worked with.

Check out their SeneGambian Jollof Rice! (Locally it is normally called Benichin or Cheb, which means ‘All in One Pot’)

Ingredients (serves 4)

1kg rice

Vegetable oil for frying

Chicken thighs or breast

1 large red/white onion (chopped small)

1 clove garlic (chopped small)

1 tsp tomato puree

1 tin of tomatoes or cherry tomatoes

1 chilli or scotch bonnet

Salt and pepper

A selection of: white cabbage, aubergines, carrots, sweet or normal potato

Fresh okra

Method:

  1. Clean and cut the meat in half and fry in vegetable oil on both sides until cooked
  2. Remove the meat and set aside then fry the onions with the tomatoes and puree until the onions are brown
  3. Pour in some water and bring to the boil, then add the vegetables, a bay leaf, salt and pepper, chilli, reduce the heat and simmer for 20 mins
  4. Remove the vegetables and add the rice gradually while continuously stirring
  5. Add back in all the ingredients, reduce heat, cover the pot, and simmer for 10 minutes then serve with spinach or rice
